Ingredients

Instructions

  1. 1. Rinse the salt off of your pigtail slices, place in a small saucepan, cover with water, and allow to come to a boil for 10-15 minutes. Drain and cover with water again, then boil for another 10-15 minutes until most of the salt has been removed. Drain and set aside.
  2. 2. Add the coconut milk to a large saucepan or soup pot along with the chopped dasheen Bush.
  3. 3. Add the cubed pumpkin and carrots, okra, pigtail, and smoked bones to the saucepan along with your onion, garlic, pimento, and hot pepper.
  4. 4. Add one cup of water and place the lid on your saucepan. Place your saucepan on medium heat and cook for approximately 20-25 minutes. Note: You can also add the hot pepper to your calaloo at the halfway mark to ensure it doesn't get too spicy.
  5. 5. While your calaloo is cooking, add a medium-sized saucepan of water to the stove on high heat and bring it to a boil. Generously salt your boiling water.
  6. 6. To the water add your sweet potato, corn, and carrots and let the water come to a boil.
  7. 7. While sweet potato, etc., are cooking, add the flour to a medium-sized mixing bowl, add salt, and mix well. Gradually add water to form your dough.
  8. 8. Place your dough on a floured surface and gently knead for 1-2 minutes. Cut it into four pieces, roll into logs, and cut into smaller pieces or shape however you desire.
  9. 9. Place your dumplings into the boiling water with the corn and sweet potato and cook for 5-6 minutes or until they begin to rise to the surface. Ensure your potatoes have softened before you drain and set aside.
  10. 10. Once all the ingredients in your calaloo have softened, lower the heat, remove the pieces of meat from the calaloo and using a food processor, a blender, or a hand blender, gradually blend into a puree.
  11. 11. Add your calaloo back to your saucepan then, add your meats, dumplings, and cooked vegetables. Add salt to taste and mix well.
  12. 12. Serve this soup hot, garnishing with thyme and hot pepper or pimento slices.

Note

1. Feel free to add hot pepper to your Calalloo at the beginning of your cooking process if you enjoy a bit more spice. Adjust the amount of hot pepper based on your preference for spiciness.

2. As mentioned before, you can boil or steam the veggies for the soup. This allows you to control the texture and doneness of the vegetables to your liking.

3. You can also use coconut milk powder as an alternative to fresh or canned coconut milk. Use a ratio of 2 packs of Coconut Milk Powder to 2 cups of water. This can be a convenient option if fresh coconut milk is not available.

4. Feel free to add a bit more water to the soup to adjust the consistency to your liking. The thickness of the soup can be adjusted based on personal preference.

5. You can also cook your dumplings into the soup after you have blended the calalloo.

**Storage Information:**
