Chicken Meatballs

Tender, well-seasoned chicken meatballs with herbs, garlic, and smoked paprika that stay juicy whether pan-fried or baked.

Ground chicken has a reputation for being lean, but with the right ingredients and technique, it produces meatballs that are incredibly moist and tender. A little olive oil mixed directly into the meat helps prevent them from drying out, while panko breadcrumbs keep the texture soft without making them dense.

Garlic, onion, smoked paprika, and a blend of herbs create layers of flavor that are noticeable without overpowering the chicken itself. As they cook, the outside develops a beautifully browned crust while the inside stays juicy.

One of the things I appreciate most about this recipe is its flexibility. You can pan-fry the meatballs for a crisp, golden exterior or bake them for a more hands-off approach, and they freeze exceptionally well, making them a great recipe to prepare ahead and cook whenever you need them.

Instructions

  1. In a large mixing bowl, combine the ground chicken, panko breadcrumbs, olive oil, diced onion, garlic, smoked paprika, parsley, basil, salt, black pepper, onion powder, garlic powder, and chili flakes. Using clean hands or a fork, gently mix everything together until just combined. Avoid overmixing, as this can make the meatballs firm instead of tender.
  2. Using about 2 tablespoons of the mixture for each one, roll into evenly sized meatballs and place them on a plate or parchment-lined tray. Once shaped, cover and refrigerate for 20–30 minutes. Chilling helps the meatballs firm up, making them easier to cook while helping them hold their shape.
  3. For pan-frying, heat enough oil to lightly coat the base of a large skillet over medium heat. Arrange the meatballs in a single layer, leaving a little space between each one. Cook for 10–12 minutes, turning every few minutes until they're evenly browned on all sides and reach an internal temperature of 165°F (74°C).
  4. For baking, preheat the oven to 375°F (190°C). Arrange the meatballs on a lightly greased or parchment-lined baking tray, leaving space between each one. Bake for 25–30 minutes, turning them halfway through cooking, until they're lightly browned and cooked through to 165°F (74°C).
  5. Allow the meatballs to rest for 3–5 minutes before serving. This gives the juices time to redistribute, keeping the meatballs moist and tender.

Note

Chilling the meatballs before cooking makes them easier to handle and helps prevent them from falling apart.

Wet your hands lightly with water or oil when rolling the meatballs to prevent the mixture from sticking.

Freeze uncooked meatballs in a single layer until solid before transferring them to a freezer-safe bag or container. They'll keep well for up to 2 months.

Defrost overnight in the refrigerator before cooking. Avoid thawing at room temperature for the best texture.

Cooked meatballs can be refrigerated for up to 4 days and reheated gently in a skillet, oven, or simmering sauce.
