There’s nothing quite like a freshly fried snapper, still sizzling from the pan, the skin crisp and golden, and the inside flaking apart with a fork. This Crispy Fried Snapper, seasoned with jerk spice and fresh green seasoning, takes that familiar comfort and dials it up with layers of flavor from a seasoned flour dredge and a punchy marinade.
Every piece of fish is first cleaned and scored to help the seasoning seep deep into the flesh. A generous rub of homemade green seasoning, dried thyme, and jerk seasoning gives the fish a rich, herbaceous, slightly smoky profile with a mild peppery kick. From there, each snapper is coated in a dredge seasoned with garlic, onion, cayenne, paprika, ginger, and more, creating a light but flavorful crust when shallow-fried.
This dish is perfect for fish lovers who want that crisp exterior without deep-frying. Whether paired with fried bakes, provision, a light slaw, or even eaten plain with hot pepper sauce, this fried snapper holds its own. It’s a true Trini-style fry, simple, well-seasoned, and always crowd-pleasing.
INGREDIENT DETAILS
Whole Snapper (4–5 medium)
Provides the meaty base of the dish. Snapper holds up well to frying and delivers mild, sweet flavor with flaky texture.
Green Seasoning (5 tbsp)
Infuses the fish with herbal depth—made from a blend of fresh herbs like chadon beni, scallions, garlic, and more.
Jerk Seasoning (2 tbsp)
Adds smoky heat and island flavor, complementing the green seasoning and giving a nod to Jamaican influence.
Dried Thyme (1 tbsp + ¼ tsp)
Earthy and aromatic—used both in the marinade and the flour dredge for layered flavor.
Red Pepper Flakes (½ tsp, optional)
Provides extra heat and a bit of bite—great if you like it spicy.
Black Pepper (¼ tsp + 1 tsp)
Adds sharpness and balances the saltiness and earthiness in the seasoning mix.
Salt (1½ tsp + ½ tsp)
Enhances all the other seasonings and ensures the fish is well seasoned throughout.
All-Purpose Flour (1½ cups)
Forms the base of the coating, creating a crisp outer layer when fried.
Cornstarch (3 tbsp, optional)
Helps create a lighter, crispier crust that holds up better when fried.
Paprika (1 tbsp)
Gives mild heat and color to the coating, adding a warm, reddish hue.
Ginger Powder (1 tbsp)
Lends warmth and slight sweetness to the dredge, enhancing the overall flavor.
Cayenne Pepper (1 tsp)
Delivers a sharper heat that builds with each bite.
Garlic Powder (2 tsp)
Adds umami and depth without overpowering the fresh herbs in the marinade.
Onion Powder (2 tsp)
Boosts savoriness and rounds out the flavor profile of the dredge.
Oil (for shallow frying)
Used to fry the fish to crisp, golden perfection. Neutral oils like vegetable or canola work best.
Lime or Lemon Water (for washing fish)
Used to clean the fish and remove any raw or “fresh” scent before seasoning.

Instructions
- Using a sharp knife, score each fish with three slits on both sides. Place the cleaned, washed snapper into a large bowl and season with green seasoning, jerk spice, thyme, red pepper flakes, salt, and black pepper. Rub everything in thoroughly, getting into the slits. Cover and set aside to marinate for at least 30 minutes, or overnight for best results.
- In a wide bowl, mix together the flour, cornstarch, and all dredge spices. Heat oil in a large skillet over medium-high heat.
- To test the oil, dip the end of a wooden spoon into the pan, if bubbles form around it, your oil is ready.
- Take one fish at a time, dredge it in the flour mixture, and coat evenly. Shake off any excess flour before gently placing the fish in the oil. Fry each side for 4–5 minutes until golden brown and crisp, then flip and fry the other side the same way. Remove and place on paper towels to drain.
- Repeat with remaining fish and serve hot with sides of your choice.
Note
Marinating: The longer the fish marinates, the deeper the flavor—overnight in the fridge is ideal.
Crisp Coating Tip: Cornstarch makes the crust lighter and crispier. Omit if you prefer a heartier coating.
Oil Temperature: Keep your heat steady, not too low or the fish will absorb oil; not too high or the crust will burn.
