Instructions
- In a large mixing bowl, whisk together the flour, baking powder, cinnamon, and salt until evenly combined. In a separate bowl or measuring jug, combine the milk, oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently until a batter forms. Mix only until the ingredients are incorporated; a few small lumps are perfectly fine. Avoid overmixing, as this can make the pancakes dense rather than fluffy.
- Heat a lightly buttered skillet or griddle over medium heat. Once hot, pour portions of batter onto the surface, leaving space between each pancake. Cook for approximately 2 to 3 minutes on the first side, or until bubbles begin forming across the surface and the edges start looking set.
- Flip the pancakes and continue cooking for another 1 to 2 minutes until golden brown and cooked through. Transfer the cooked pancakes to a plate and repeat with the remaining batter, adding more butter to the pan as needed.
- Serve warm with butter, Cinnamon Butter Pancake Syrup recipe linked above, fresh fruit, whipped cream, or your favorite breakfast toppings.
Note
For extra fluffy pancakes, allow the batter to rest for 5 minutes before cooking. This gives the baking powder time to activate and hydrate the flour.
Do not press down on the pancakes after flipping, as this can force out air and reduce fluffiness.
If you prefer sweeter pancakes, add 1 to 2 tablespoons of brown sugar to the batter.
For a richer flavor, replace part of the milk with evaporated milk.
Leftover pancakes can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat in a toaster, microwave, or skillet before serving.
For additional flavor variations, add chocolate chips, chopped nuts, raisins, shredded coconut, or diced fruit to the batter before cooking.
