FRIED BAKES

Fried Bakes are golden, fluffy discs of fried dough that bring comfort and satisfaction in every bite.

Fried Bakes, one of the simplest yet amazingly delicious comfort foods, is a personal favorite of mine. These golden discs of fried dough are warm and fluffy on the inside and can be perfectly paired with a wide variety of fillings. “Sigh,” you simply cannot go wrong with this on almost any menu. This delightful “bake” can be found in many Caribbean countries under various names; specifically, it is called Fried Bakes in Trinidad and Tobago, but I also know it as floats. If it wasn’t already clear that I am in love with this type of “bread,” let me state that I am. Why not try the recipe yourself and fall in love as well?

INGREDIENT DETAILS

  1. All-Purpose Flour:
  • All-purpose flour is a versatile staple in baking, suitable for a wide range of recipes including bread, cakes, and pastries. It provides structure to the dough and contributes to the texture of the final product.
  1. Baking Powder:
  • Baking powder is a leavening agent that helps the dough rise and become fluffy when fried. It consists of an acid and a base that react when combined with moisture, creating carbon dioxide gas bubbles that expand the dough.
  1. Brown Sugar:
  • Brown sugar adds a subtle sweetness and depth of flavor to the Fried Bakes. It also helps with browning and caramelization during the frying process.
  1. Butter/Margarine:
  • Butter or margarine adds richness and flavor to the dough, enhancing the overall taste of the Fried Bakes. It also contributes to the tenderness of the final product.
  1. Salt:
  • Salt enhances the flavor of the Fried Bakes and helps balance the sweetness from the brown sugar. It is a crucial ingredient for bringing out the other flavors in the recipe.
  1. Water:
  • Water is used to bind the ingredients together and form the dough. The amount of water added should be adjusted to achieve the right consistency – not too sticky or too dry.
  1. Vegetable Oil:
  • Vegetable oil is used for frying the dough. It should be heated to the right temperature to ensure that the Fried Bakes cook evenly and develop a crispy, golden exterior.

These ingredients work together to create the delicious Fried Bakes that are crispy on the outside and soft on the inside. If you need more specific details or information on any ingredient, feel free to ask!

INGREDIENTS & ALTERNATIVES

  1. All-Purpose Flour:
  • Whole wheat flour, bread flour, or gluten-free flour blends can be used as alternatives to all-purpose flour. Each type of flour may result in slightly different textures and flavors.
  1. Baking Powder:
  • If you prefer a natural leavening agent, you can use a combination of baking soda and an acid like cream of tartar or lemon juice as a substitute for baking powder.
  1. Brown Sugar:
  • White granulated sugar, coconut sugar, honey, maple syrup, or agave nectar can be used instead of brown sugar. Each alternative will impart a slightly different flavor profile to the Fried Bakes.
  1. Butter/Margarine:
  • Coconut oil, vegetable shortening, ghee, or plant-based margarine can be used as substitutes for butter in the recipe. These alternatives may alter the taste and texture of the Fried Bakes slightly.
  1. Salt:
  • Sea salt, kosher salt, or Himalayan pink salt can be used interchangeably with regular table salt. Each type of salt may have a slightly different intensity, so adjust the amount accordingly.
  1. Water:
  • Milk (dairy or plant-based), buttermilk, yogurt, or coconut water can be used in place of water in the recipe. These alternatives may add richness or tanginess to the dough.
  1. Vegetable Oil:
  • Canola oil, sunflower oil, peanut oil, or coconut oil can be used for frying the Fried Bakes. Each oil will impart a slightly different flavor to the final product.

These alternative ingredients can offer variations in flavor, texture, and dietary preferences for the Fried Bakes recipe. Feel free to experiment with these substitutions to suit your taste and dietary needs! Instructions

  1. 1. In a large mixing bowl, add flour, baking powder, salt, and brown sugar. Mix well.
  2. 2. Add butter or margarine and rub into the flour using your hands until properly incorporated.
  3. 3. Gradually add water slowly until the flour is binded but not very sticky. Knead for 2 minutes and then roll into a ball. Set aside in a bowl covered with a towel. Let the dough rest for 15-20 minutes.
  4. 4. Heat vegetable oil in a frying pan or skillet over high heat to a temp of 325°F -350°F
  5. 5. On a floured surface, divide the dough into 8-9 small balls and begin rolling each ball out into a circular shape.
  6. 6. Add dough to oil and slowly ladle oil unto bake (it will begin puffing up gradually) once it has fully puffed up or is golden on the edges flip and fry  on the other side. Remove from heat and place in a bowl lined with greaseproof paper or paper towels to absorb excess oil.
  7. 8. Serve hot with cheese, buljol, smoked herring, tomato choka, or any desired filling.

Note

1. **Consistency of Dough:** When adding water to the dry ingredients, do so gradually. The dough should be soft and pliable but not too sticky. Adjust the amount of water as needed to achieve the right consistency.

2. **Resting Time:** Allowing the dough to rest for 15-20 minutes after kneading helps relax the gluten and makes the dough easier to work with. This step also enhances the texture of the Fried Bakes.

3. **Frying Technique:** Ensure the oil is at the correct temperature before adding the dough. Fry the bakes in batches, making sure not to overcrowd the pan, to ensure even cooking and a crispy exterior.

4. **Testing Oil Temperature:** To check if the oil is hot enough for frying, you can drop a small piece of dough into the oil. If it sizzles and rises to the surface immediately, the oil is ready for frying.

5. **Fillings:** Fried Bakes can be filled with a variety of savory or sweet fillings such as cheese, ham, saltfish, or jam. Experiment with different fillings to create unique flavor combinations.

**Storage Information:**

1. **Short-Term Storage:** Once fried, Fried Bakes can be stored at room temperature in an airtight container or zip-top bag for up to 2-3 days. Reheat in an oven or toaster oven to crisp them up before serving.

2. **Freezing:** To freeze Fried Bakes, allow them to cool completely, then place them in a single layer on a baking sheet and freeze until solid. Once frozen, transfer to a freezer-safe bag or container. They can be stored in the freezer for up to 3 months.

3. **Reheating:** To reheat frozen Fried Bakes, thaw them in the refrigerator overnight. Then, warm them in an oven or toaster oven until heated through and crispy.

By following these cooking notes and storage tips, you can enjoy freshly made Fried Bakes at their best and preserve them for later enjoyment. If you have any more questions or need further assistance, feel free to ask!
