Chicken Patties are one of those recipes that earn their place in the rotation because they solve a real problem. Ground chicken is lean and mild, which means it can dry out fast or taste flat if it is not handled well. This version fixes both issues with a few small choices: panko for lightness, egg for binding, and a spice blend that gives the meat something to lean on.
The seasoning here leans savoury rather than spicy. Smoked paprika brings a mild, almost woodsy depth, dried basil and oregano add an earthy, herbaceous note, and chili flakes sit in the background for gentle warmth. Fresh parsley lifts the whole mixture and keeps it tasting bright rather than heavy. It is a flavour profile that works with almost any topping you decide to pile on later.
The panko does more than stretch the meat. It keeps the patties tender and stops them from turning dense, which is the usual fate of lean ground chicken. The egg holds everything together so the patties survive the pan without crumbling, and the short chill in the fridge helps them set so they keep their shape.
Cooking is straightforward, but thickness matters more than people expect. A 1/4 cup scoop gives you a consistent size, and flattening it to about 3/4 inch gives the best balance of a browned crust and a juicy centre. Thicker patties need more time and a lid, thinner ones cook fast and can dry out if you walk away.
These Chicken Patties are also a smart prep item. Form them, freeze them solid, and you have a ready protein for burgers, wraps, or a quick dinner on a night when cooking from scratch is not happening. They reheat gently and hold their texture, which is more than most homemade patties can claim.
INGREDIENT DETAILS
Minced chicken (1 lb): Ground chicken is lean, mild, and absorbs seasoning well. It is the base of the patty, and because it has less fat than beef, it needs binders and gentle handling to stay juicy.
Panko breadcrumbs (1/2 cup): Panko is lighter and coarser than regular breadcrumbs, which keeps the patties tender instead of dense. It also absorbs moisture from the chicken and vegetables so the mixture holds together.
Egg (1 large): The egg binds the mixture and adds richness. Without it, the patties are more likely to fall apart in the pan, especially since ground chicken is lean.
Onion (1 large): Onion adds moisture, sweetness, and a savoury backbone. Grinding it in the food processor means it disappears into the mixture rather than leaving chunky bits that can break the patty apart.
Bell pepper (1/2 small): Bell pepper adds a mild sweetness and a little moisture. It also contributes colour and a soft texture once cooked.
Olive oil (2 tsp): Added to the food processor, the oil helps the vegetables grind into a smooth paste rather than a watery pulp. It also carries flavour through the mixture.
Garlic (2 to 3 cloves): Garlic gives the patties a pungent, aromatic base. Grinding it with the vegetables distributes it evenly so no single bite is overpowered.
Fresh parsley (1 tsp, minced): Parsley adds a clean, slightly peppery freshness that lifts the richer notes of the chicken and spices. It keeps the patties from tasting flat.
Smoked paprika (1 tsp): Smoked paprika brings a mild, smoky depth and a warm red colour. It is the note that makes these patties taste grilled even when they are pan cooked.
Dried basil (1/2 tsp): Basil adds a sweet, slightly anise-like herbal note that pairs well with the oregano and paprika.
Dried oregano (1/2 tsp): Oregano brings a warm, earthy, slightly bitter herb flavour that rounds out the seasoning blend.
Chili flakes (1/2 tsp): Chili flakes add gentle heat and a little texture. They sit in the background rather than dominating, so the patties stay family friendly.
Black pepper (1/4 tsp): Black pepper adds a sharp, warm bite that balances the sweetness of the vegetables and the smokiness of the paprika.
Salt (1 tsp): Salt seasons the mixture throughout and helps the proteins bind so the patties hold their shape.
Oil of choice (for cooking): A neutral oil with a high smoke point, such as canola or avocado, is best for frying. It creates the browned crust without adding its own flavour.
INGREDIENT ALTERNATIVES
Main Recipe Ingredients: Minced chicken, panko breadcrumbs, egg, onion, bell pepper, olive oil, garlic, fresh parsley, smoked paprika, dried basil, dried oregano, chili flakes, black pepper, salt, oil of choice.
Alternatives:
Minced chicken: Ground turkey works as a 1:1 substitute. Ground pork or a pork and chicken mix also works if you want more fat and flavour.
Panko breadcrumbs: Regular breadcrumbs or crushed cornflakes can be used, though the texture will be slightly denser. Gluten-free panko works for a gluten-free version.
Egg: A flax egg (1 tbsp ground flax mixed with 3 tbsp water) can replace it, though the patties will be slightly more delicate.
Onion: Shallots or a smaller amount of red onion can be used. Sweet onion gives a milder result.
Bell pepper: Any colour bell pepper works. A small amount of grated carrot can stand in for sweetness.
Olive oil: Any neutral oil works in the food processor, such as canola or grapeseed.
Garlic: Garlic paste can be used, about 1 tsp.
Fresh parsley: Dried parsley can be used, about 1/3 tsp since dried herbs are more concentrated. Cilantro works if you like the flavour.
Smoked paprika: Sweet paprika with a pinch of cumin gives a similar warmth without the smoke.
Dried basil: Dried thyme or marjoram can be used.
Dried oregano: Dried thyme or Italian seasoning works.
Chili flakes: Cayenne pepper or a dash of hot sauce can be used, but adjust to taste.
Black pepper: White pepper can be used for a milder note.
Salt: No substitute needed.
Oil of choice: Any high smoke point oil works, including canola, avocado, or vegetable oil.

Note
Ground chicken is leaner than beef, so do not press the patties too flat or they will dry out. A 1/4 cup scoop works best at about 3/4 inch thick for a standard burger.
If the mixture feels too wet to hold its shape, add another tablespoon of panko. If it feels too dry, add a splash of water or another egg yolk.
Chilling for 1 hour helps the patties hold together and keeps them from crumbling in the pan.
For meatballs, roll the 1/4 cup scoop into balls about 1 1/2 inches wide and cook for 6 to 8 minutes, turning often.
Cooked patties keep in the fridge for up to 3 days and reheat gently in a skillet.
