This Plantain Black Bean Burger is a bold, flavor-packed take on a meatless burger that doesn’t feel like a compromise. Built around hearty mashed black beans seasoned with smoked paprika, garlic, and mustard, the patty develops crisp edges when pan-fried while staying tender on the inside. Paired with sweet fried ripe plantains, sautéed onions, and a creamy Swiss Mambo dressing, every bite delivers layers of smoky, sweet, savory, and lightly spicy flavor.
What makes this burger special is the contrast in textures and tastes. The earthy richness of the black beans balances beautifully with the caramelized sweetness of the plantains, while the Swiss Mambo Sauce adds its signature sweet heat that ties everything together. Inspired by Caribbean flavor profiles we love in Trini-style cooking, this burger feels familiar yet exciting, comforting but vibrant.
Perfect for meatless Mondays, casual weekend lunches, or budget-friendly dinners, this Plantain Black Bean Burger is made with pantry staples and simple techniques. Instructions
- Place the drained black beans on paper towels and gently pat dry to remove excess moisture. Transfer to a mixing bowl and mash using a fork or potato masher until mostly mashed but still slightly chunky. Add the diced onion, minced garlic, breadcrumbs, smoked paprika, onion powder, garlic powder, liquid smoke, mustard, salt, black pepper, and chili flakes. Mix until fully combined.
- Scoop the mixture into 3–4 portions, form into balls, and place in the refrigerator to rest and firm up while you prepare the other components.
- Heat oil in a frying pan over medium heat. Peel the plantains, slice lengthways, and fry until golden and slightly darkened. Drain on paper towels and set aside.
- In a small frying pan, heat olive oil and sauté the sliced onions until golden or lightly caramelized, depending on preference. Remove from heat and set aside.
- In a small bowl, mix together the Swiss Mambo Sauce and Swiss Eggless Mayo until smooth. Set aside.
- Heat oil in a large skillet over medium heat. Remove the patties from the fridge and gently shape to about 1/2-inch thickness. Cook for 1–2 minutes per side until golden with lightly crisp edges. Remove from heat and let rest for 1 minute.
- To assemble, place lettuce and tomato on the bottom half of each bun. Add the black bean patty, followed by fried plantains and sautéed onions. Spread the Mambo dressing on the top bun, close, and serve immediately.
Note
Make sure the beans are well dried to prevent soft patties.
Resting the mixture in the fridge helps the burgers hold together while cooking.
Adjust spice levels by increasing chili flakes or adding pepper sauce to the dressing.
Patties can be formed ahead and refrigerated for up to 24 hours.
Serve with fries, salad, or a simple slaw for a complete meal.
