Instructions
- Begin by preheating the oven to 350°F (180°C) and greasing a baking dish or lining it with parchment paper. In a bowl, combine the diced plantains with sugar, cinnamon, nutmeg, and salt. Mix well until the plantains are evenly coated, then set aside.
To prepare the crumble topping, add the flour and cold cubed margarine/butter to a bowl. Using your fingertips, rub the butter into the flour until the mixture resembles coarse crumbs with small bits of butter still visible. Add the sugar, cinnamon, and salt, and gently mix until evenly combined. The crumble should hold slightly when pressed but fall apart easily. Refrigerate until ready to use.
For the cake batter, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, mix the melted margarine/butter and sugar until combined. Stir in the milk, vinegar, and vanilla, then gradually add the dry ingredients, mixing just until smooth and lump-free.
- Pour the batter into the prepared baking dish and bake for about 15 minutes, just until the surface begins to set.
- Carefully remove from the oven and sprinkle over half of the crumble topping, followed by the spiced plantain mixture, then finish with the remaining crumble. Return to the oven and continue baking for 20–25 minutes, or until a toothpick inserted into the cake comes out clean.
- Allow the cake to cool gradually before slicing. Serve warm or at room temperature drizzled with icing glaze drizzled over the top of cake or scoops of vanilla ice cream.
Note
Use very ripe plantains with blackened skins for the best sweetness and texture.
For extra richness, replace part of the milk with coconut milk.
This cake stores well covered at room temperature for 1 day or refrigerated for up to 4 days.
Reheat slices gently to restore softness.
Add chopped nuts or shredded coconut to the crumble for extra texture, or serve warm with vanilla ice cream or custard.
