Skillet Onion Chicken is one of those recipes that proves you don’t need a long list of ingredients to make something deeply satisfying. A handful of pantry staples, plenty of onions, and properly browned chicken come together to create a meal that’s rich in flavor without relying on heavy sauces or complicated techniques. It’s the kind of recipe that lets each ingredient do its job while the slow simmer brings everything together.
The first step is taking the time to brown the chicken well. As the skin develops a deep golden colour, it leaves behind flavourful browned bits in the skillet that become the foundation of the sauce. Instead of discarding those bits, the sliced onions are cooked in the same pan where they soften, caramelize slightly, and absorb every bit of flavour left behind. By the time the broth is added, the onions have already begun building a naturally sweet and savoury base.
Goya Chicken Bouillon keeps the broth simple while adding depth that complements the garlic, thyme, and black pepper without overpowering the chicken itself. A small amount of red pepper flakes provides gentle warmth rather than noticeable heat, allowing the sweetness of the onions and the richness of the chicken to remain the stars of the dish. As the chicken finishes cooking, the liquid slowly reduces into a light onion gravy that’s perfect for spooning over your favourite side dish.
What makes this version especially reliable is its straightforward cooking method. Everything happens in a single skillet, making cleanup easy while allowing the chicken to stay moist as it gently braises. Whether you serve it with steamed rice, mashed potatoes, roasted vegetables, or crusty bread to soak up the onion sauce, Skillet Onion Chicken is the kind of dependable recipe you’ll find yourself returning to whenever you want a comforting homemade meal made with everyday ingredients.
Ingredient Details
Chicken Leg and Thigh Quarters –
Bone-in, skin-on chicken stays juicy during braising while the skin browns beautifully, adding rich flavor to both the chicken and the pan sauce.
Goya Chicken Bouillon –
Adds concentrated savory chicken flavor and forms the base of the cooking broth, giving the finished sauce extra depth.
Onions –
As they cook, the onions soften and lightly caramelize, bringing natural sweetness and creating the body of the sauce.
Garlic –
Adds a warm, aromatic flavor that complements the onions and enhances the overall savoriness of the dish.
Dried Thyme –
Provides a subtle earthy, herbal note that pairs especially well with chicken.
Red Pepper Flakes –
Adds a gentle background heat that balances the sweetness of the onions without making the dish overly spicy.
Black Pepper –
Contributes mild heat and enhances the flavor of the chicken and seasonings.
Goya Pink Salt –
Seasons the chicken evenly and helps bring out the natural flavors of the meat.
Olive Oil (for marinating) –
Helps the seasonings adhere to the chicken while adding a touch of richness.
Olive Oil (for cooking) –
Prevents sticking and helps the chicken develop a deep golden-brown crust during searing.
Hot Water –
Dissolves the bouillon and creates the braising liquid that gently cooks the chicken while forming the sauce.
Fresh Parsley –
Adds a fresh, bright finish and a pop of color just before serving.
Ingredient Alternatives
Chicken Leg and Thigh Quarters –
Bone-in chicken thighs, drumsticks, or a whole cut-up chicken can be used. Boneless thighs also work but will require less cooking time.
Goya Chicken Bouillon –
Substitute with another brand of chicken bouillon or use 1½ cups of prepared chicken stock with salt adjusted to taste.
Onions –
Yellow onions are ideal, but white onions or sweet onions work equally well.
Garlic –
Fresh garlic provides the best flavor. In a pinch, use 1 teaspoon garlic powder.
Dried Thyme –
Replace with 1 tablespoon fresh thyme leaves or use a small amount of poultry seasoning if needed.
Red Pepper Flakes –
Substitute with a pinch of cayenne pepper or omit if you prefer a milder dish.
Black Pepper –
Freshly cracked black pepper is recommended, but pre-ground black pepper works just as well.
Goya Pink Salt –
Replace with regular table salt, kosher salt, or sea salt.
Olive Oil (for marinating) –
Avocado oil, vegetable oil, canola oil, or another neutral cooking oil can be used.
Olive Oil (for cooking) –
Any neutral oil with a medium to high smoke point, such as canola, vegetable, or avocado oil, is a suitable substitute.
Hot Water –
No substitute needed. If using prepared chicken stock instead of bouillon, omit the hot water.
Fresh Parsley –
Fresh cilantro or chopped chives can be used for garnish, or simply omit if preferred.

Skillet Onion Chicken
Skillet Onion Chicken is a simple one-pan chicken recipe that starts with beautifully browned chicken quarters before they're gently simmered with onions, garlic, herbs, and Goya Chicken Bouillon. As the onions soften and the broth reduces, they create a light, savory sauce that's perfect spooned over rice, mashed potatoes, or buttered noodles.

Ingredients
Instructions
- Place the chicken quarters into a large bowl. Add the olive oil, pink salt, black pepper, thyme, red pepper flakes, and minced garlic. Massage the seasonings over every piece of chicken until evenly coated. Cover and marinate for at least 30 minutes or up to 1 hour.
- Heat the remaining olive oil in a large skillet over medium heat. Place the chicken skin-side down and cook for 6 to 8 minutes until the skin becomes deep golden brown and easily releases from the pan. Turn the chicken over and cook for another 3 to 4 minutes. Transfer the chicken to a plate.
- Add the sliced onions to the skillet and cook in the remaining oil and chicken drippings, stirring occasionally until softened and beginning to caramelize around the edges, about 6 to 8 minutes.
- Dissolve the Goya Chicken Bouillon in the hot water. Return the chicken to the skillet and pour the broth around the chicken. Bring to a gentle simmer, then reduce the heat to low. Cover and cook for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove the lid during the final few minutes if you would like a slightly thicker sauce. Spoon the onions over the chicken before serving and garnish with freshly chopped parsley.
Note
Allow the chicken to brown properly before turning for the best flavour.
Slice the onions evenly so they cook at the same rate.
If the sauce reduces too much before the chicken is fully cooked, add a splash of hot water.
Leftovers keep well in the refrigerator for up to 3 days and reheat gently on the stovetop.
