SPICY TAMARIND GLAZED CHICKEN TENDERS

Crispy, flavorful chicken tenders marinated in a zesty green seasoning, coated in a perfectly seasoned batter, and fried to golden perfection before it's tossed in a tangy, sweet and spicy tamarind sauce.

This recipe features crispy hot tenders that are a delightful blend of tart, sweet, and spicy notes, infused with a medley of aromatic herbs. Growing up on the beautiful island of Trinidad and Tobago, I am no stranger to the sticky sweet, tart, and tangy tamarind fruit. Oftentimes in our cuisine, it is used to make condiments or snacks. However, years ago, while attending a local food festival appropriately titled the Bess Food Festival, I eagerly tried tamarind chicken. As I bit into the steaming hot, sweet and sour, incredibly well-seasoned, juicy chicken thigh, I knew I was a tamarind chicken lover.

In my search for examples of tamarind chicken recipes, I found many in Asian, African, and Caribbean cooking, and I am, of course, delighted to add one of my own recipes to the fray. In this recipe, I chose to pair it with fluffy white rice and a refreshing Asian cucumber salad, creating a perfect balance of flavors and textures. Get ready to tantalize your taste buds with this vibrant dish that’s sure to impress

INGREDIENT DETAILS

For Chicken

  • Boneless Chicken Breasts (3 medium-sized): The main protein source. Cutting them into strips creates tender, bite-sized pieces that cook quickly.
  • Green Seasoning (3 tbsp): A blend of herbs and spices that adds freshness and flavor to the chicken. Common ingredients may include parsley, cilantro, garlic, and other spices.
  • Salt (1 tsp): Enhances the overall flavor of the chicken and helps to tenderize the meat.

For Batter

  • All-Purpose Flour (2 cups): The primary ingredient for the batter, providing structure and a crispy coating when fried.
  • Water (1/4 cup): Hydrates the flour to create the batter. Adjust the amount for desired thickness.
  • Garlic Powder (2 tsp): Adds a rich, savory flavor to the batter.
  • Smoked Paprika (1 tsp): Contributes a mild smokiness and vibrant color to the coating.
  • Onion Powder (1 tsp): Provides an additional layer of savory flavor.
  • Mustard Powder (1 tsp): Adds a subtle tang and enhances the overall flavor profile.
  • Salt (1 tsp): Seasoning for the batter, ensuring a well-rounded taste.
  • Chili Powder (1/2 tsp): Adds mild heat and depth of flavor. Adjust to taste.
  • Black Pepper (1/2 tsp): Adds a bit of spice and enhances the flavor of the batter.

For Tamarind Sauce

  • Tamarind Sauce (2 cups): The base of the sauce, providing a unique sweet and tangy flavor. Can be homemade or store-bought.
  • Water (1/2 cup): Dilutes the tamarind sauce to achieve the desired consistency.
  • Brown Sugar (1/4 cup): Balances the tartness of the tamarind with sweetness. Adjust to taste depending on preference.
  • Red Pepper Flakes (2 tsp): Adds heat to the sauce. Adjust according to your spice tolerance.
  • Garlic (1-2 cloves, minced, optional): Enhances the flavor of the sauce with a savory kick.

General Notes

  • When selecting chicken, look for pieces that are firm and have a pinkish color. Avoid any that appear discolored or have a strong odor.
  • Fresh herbs for green seasoning can enhance flavor significantly; consider using a mix of parsley, cilantro, chives, and garlic.
  • For the tamarind sauce, ensure the tamarind paste or concentrate is fresh for the best flavor.
  • Adjust spices based on personal preference; the amounts given are a guideline.

Ingredients

Instructions

  1. Place the chicken tenders in a large mixing bowl. Add the green seasoning and salt, mixing until the chicken is well-coated. Cover or seal the bowl and let it marinate for 15-20 minutes.
  2. In another medium-large mixing bowl, add the flour and all the spices and seasonings. Mix thoroughly to ensure even distribution.
  3. Preheat the oil for frying to 350°F. Use a thermometer to check the temperature for accuracy.
  4. Once the flour is seasoned, scoop 1/2 cup of the seasoned flour into the bowl with the marinated chicken tenders. Add the water and mix until a thick, smooth batter forms.
  5. Dip each marinated chicken tender individually into the remaining seasoned flour, shaking off any excess. Let the tenders rest for 5-7 minutes before placing them in the hot oil to fry in batches. Fry for 8-10 minutes or until the tenders are golden brown and reach an internal temperature of 165°F. Be careful not to overcrowd the pan, as this can lower the oil temperature.
  6. Once all the tenders are fried, place them on a wire rack or paper towels to drain off excess oil.
  7. In a medium-sized frying pan or saucepan, combine the tamarind sauce, water, brown sugar, red pepper flakes, and minced garlic (if using). Stir gradually to dissolve the sugar and bring the mixture to a low simmer.
  8. Add the fried chicken tenders to the saucepan and toss to coat them evenly in the sauce.
  9. Remove from heat and serve hot. Enjoy your delicious chicken tenders with tamarind sauce!

Note

  • Marination: For deeper flavor, marinate the chicken for longer (up to 2 hours) if time allows.
  • Frying Temperature: Ensure the oil stays at 350°F for even cooking. Use a thermometer for accuracy.
  • Batch Frying: Fry in small batches to prevent overcrowding, which can lower the oil temperature and result in soggy tenders.
  • Serve Immediately: For the best texture, serve the tenders right after frying and coating them in sauce.

Storage Information

  • Refrigeration: Store leftover cooked chicken tenders in an airtight container in the refrigerator for up to 3 days.
  • Freezing: To freeze, place cooked tenders in a single layer on a baking sheet and freeze until solid. Transfer to a freezer-safe container or bag; they can be frozen for up to 2 months.
  • Reheating: Reheat in the oven at 350°F until warmed through for best results, or use an air fryer to restore crispiness.
