STEW CHICKEN

A rich and comforting Caribbean classic made by stewing chicken in caramelized sugar, herbs, and seasonings—simple, bold, and deeply flavorful.

One of the most common ways to prepare meat locally is by stewing. Stewing is a traditional method used across the Caribbean to cook meats and even some vegetables. It starts by caramelizing brown sugar until it reaches a deep brown hue—not burnt, but just past light caramel. Then the meat is added to soak up that rich, molasses-like color and flavor. With the addition of water or broth, herbs, and aromatics, it cooks down into a savory, slightly sweet, deeply satisfying stew. We stew just about anything—chicken, beef, pork, turkey, goat, even potatoes. It’s simple, delicious, and packed with island soul.

INGREDIENT DETAILS

Chicken: Use a whole chicken cut into small pieces for more flavor and variety in texture.

Green Seasoning: A blend of herbs, garlic, and aromatics that’s foundational to Caribbean cooking.

Brown Sugar: Not just for sweetness—it’s caramelized to start the stew and adds color and depth.

Pimento Peppers: Add subtle spice and a fruity aroma.

Thyme, Bay Leaves, Onion, Garlic: Classic aromatics for layering flavor.

Butter & Ketchup: Adds body and richness to the sauce.

INGREDIENT ALTERNATIVES

Chicken: Substitute with turkey wings, drumsticks, or boneless thighs.

Green Seasoning: If unavailable, blend scallions, garlic, thyme, parsley, and a bit of vinegar or lime.

Brown Sugar: Dark brown sugar works best, but light brown can work in a pinch.

Instructions

  1. Place the chicken in a bowl of water with vinegar or lime juice. Clean thoroughly by removing excess skin and fat, then drain well. Season the chicken with green seasoning, salt, and black pepper. Mix well and let marinate for at least 30 minutes.
  2. Heat a medium saucepan over high heat. Add the brown sugar and let it melt undisturbed until it starts to bubble and caramelize. Stir gently as it turns a rich, frothy brown.
  3. Carefully add the seasoned chicken to the pot and stir to coat it in the caramelized sugar. Let the chicken sear for about 1 minute, then pour in the water and stir again.
  4. Cover the pot and cook on medium heat for 15–20 minutes. Once the chicken has absorbed the color and begun to tenderize, uncover and add the chopped pimento, onion, garlic, thyme, bay leaves, butter, ketchup, and hot pepper. Mix well.
  5. Let the stew simmer uncovered until the liquid reduces by half and thickens to a rich gravy. Taste and adjust salt as needed. Once the chicken is tender and the sauce is full-bodied, remove from heat.
  6. Serve hot with rice, roti, macaroni pie, or your favorite sides.

Note

Take care not to burn the sugar—it should be deep brown but not black. Burnt sugar will add bitterness.

Marinating the chicken is key. The longer, the better—overnight if possible.

Add vegetables like carrots or potatoes to bulk up the dish or stretch it further.

For a spicier version, add hot pepper during cooking (whole or chopped).
