Trini Style Roast Chicken

Roasted succulent chicken seasoned with rich Trini green season and simple spices flavored to the bone.

The first thing you notice about this chicken isn’t even the taste, it’s the smell that builds in the oven. Trinbagonian seasoning, garlic, herbs, and spices slowly warm up and start to perfume the kitchen long before the skin begins to brown. What makes this version work so well is the balance between moisture and heat.

The chicken is fully coated and rested overnight, so the seasoning doesn’t just sit on the surface, it settles into the meat and carries through every bite.
The oven does the rest of the work. High heat at the start helps tighten the skin, while the small splash of water in the tray keeps the bottom from drying out too quickly, letting the chicken roast without losing its juiciness.

Smoked paprika is added right before roasting, not to overpower anything, but to deepen the colour as it cooks. It gives the skin that rich, roasted finish that looks almost lacquered once it comes out of the oven. Now that you know what you’re in for with this recipe, let’s make it.

INGREDIENT DETAILS

Chicken – The base of the dish. Cutting the whole birds into halves helps them cook more evenly and allows the marinade to penetrate more deeply.

Green seasoning – The core flavour builder. It brings herbs, aromatics, and heat depending on the blend, and is responsible for the depth in every bite.

Salt – Seasons the meat from within and helps the chicken retain moisture during roasting.

Black pepper – Adds a light heat and sharpness that balances the herbs in the green seasoning.

Smoked paprika – Used mainly for colour, it deepens the surface of the chicken as it roasts and adds a subtle smoky note.

Water – Creates light steam in the roasting pan, preventing the drippings from burning and helping maintain juiciness.

INGREDIENT ALTERNATIVES

No substitute needed for the chicken or core seasoning, but:
Green seasoning can be swapped with a blend of blended herbs (thyme, parsley, chadon beni/cilantro, garlic, onion, scallion, and hot pepper).

Smoked paprika can be replaced with regular paprika, though the smoky depth will be lighter.

Instructions

  1. Season the chicken with salt, black pepper, and green seasoning.
  2. Cover and refrigerate overnight to marinate.
  3. Preheat oven to 400°F (200°C).
  4. Arrange chicken on a greased baking tray or a roasting pan with a wire rack skin side up.
  5. Sprinkle the smoked paprika over the top for colour.
  6. Add water to the tray to keep moisture while roasting.
  7. Roast for about 45 minutes, until golden, crisp, and fully cooked.
  8. Rest briefly before serving using pan sauce as topping.

Note

For deeper flavour, the chicken can be marinated up to 24 hours.

The longer rest allows the green seasoning to fully break down and penetrate the meat.

If you prefer extra crispy skin, place the chicken under the broiler for the last 2–3 minutes, watching closely to prevent burning.

Leftovers keep well in the fridge for up to 3 days and reheat best in the oven so the skin doesn’t soften too much.
